Tim's World Famous Cheesecake

Total Time: 7 hours (Includes refrigerating)
Makes: 12-16 servings
What You Need
-1-3/4 cups HONEY MAID graham cracker crumbs
-1/3 cup butter melted
-1-1/4 cups sugar, divided ¼ and 1 cup
-3 pkg. (8oz each) cream cheese, softened
-1 cup sour cream
-2 tsp. vanilla
-1 cup of your favorite fresh fruit (Tim’s favorite topping is cherry pie filling)
-PRE HEAT oven to 350 degrees.
-MIX cracker crumbs, butter and ¼ cup sugar; press onto bottom and 2-1/2 inches up the side of a 9-inch springform pan.
-BEAT cream cheese and remaining sugar with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating after each one is added until blended. Pour into crust.
-BAKE 1 hour to 1 hour 10 minutes or until center is almost set, turn oven off; open door slightly. Let cheesecake sit in the oven for 1 hour. Run knife around rim of the pan to loosen cake; cool completely before removing rim. Refrigerate for at least 4 hours.
-Top with fruit just before serving.
